Start with as much organic ginger as you would like, scrub it with a vegetable brush or peel it with a vegetable peeler. It is not necessary to get all the peel off. I usually leave quite a bit of peel on. Put it in a good blender and cover it about ½ way with organic lemon juice. Blend it until it is the consistency of pizza sauce or tomato puree. This can take a few minutes. Next, pour it into ice cube trays an freeze. One cube makes one big cup tea when added to hot water. Sweeten with stevia and enjoy!
