Your spice cabinet should be as stocked as your refrigerator so you never are lacking in inspiration when you\u2019re pulling spinach dinner together.<\/p>\n<p>Curry powder adds a Indian\/Asian flair to standard lentils in this recipe, and spinach adds a <a href=\"https:\/\/drjoe.com\/es\/nutrients-our-bodies-need-as-we-age\/\">nutrient<\/a>-dense burst of color.<\/p>\n<h3>Curried Lentils with Spinach<\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 cups water<\/li>\n<li>1 cup dried lentils<\/li>\n<li>1 Tbsp. oil<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>\u00bd lb. fresh spinach leaves, stemmed, washed, and chopped<\/li>\n<li>28 oz. can chopped tomatoes with liquid<\/li>\n<li>2 tsp. curry powder<\/li>\n<li>\u00bd tsp. freshly grated ginger<\/li>\n<li>\u00bc tsp. each of cinnamon and nutmeg<\/li>\n<li>\u00bd cup raisins<\/li>\n<\/ul>\n<p>Wash and sort lentils, and cook until they are tender but still keep their shape (about 1 hour). Add more water if they begin to dry out.<\/p>\n<p>Heat oil in a large skillet. Add the garlic and saut\u00e9 over low heat for 1 minute. Add the spinach leaves; cover and steam until wilted.<\/p>\n<p>Add the lentils and remaining ingredients to the skillet. Cover and simmer over low heat for 20 minutes.<\/p>\n<p>Serve over brown rice or mashed <a href=\"https:\/\/en.wikipedia.org\/wiki\/Potato\" target=\"_blank\" rel=\"noopener\">potatoes<\/a>.<\/p>","protected":false},"excerpt":{"rendered":"<p>Herbs and spices are the key to adding life to your plant-based recipes.
